Is it soft upon delivery or needs to be broken in?

It is not very stiff. It is new, so not quite as flexible as a well-used one, but I'd say it's very easily broken in. It has a piece of padding on the inside that is supposed to stay straight (which it almost always does) for a computer, or papers you don't want bent and such. But the bag can also flex to support heavy things, wide things, tall things, long things, basically anything that is not too big in general. A very good choice of a bag if I do say so myself.

There are two sizes stated: one size and large, how big is the large dimension wise?

It’s big, if you want a very large size bag, get the large one. This bag is awesome, I have the one size and it has fit everything I needed to put in there and I have plenty of room. I put my iPad Pro in there. Not searching for my tape measure.

Does it fit a water bottle on the side pocket? And is it black or dark grey?

Yes you can put a 16.9 oz water bottle in the side pockets and the color is black with a brown strap, hope this helps
