Reverse Spherification
Works perfectly for reverse spherification. I use it whenever I want a liquid filled sphere of something or other - so far I've done tahini, mango, strawberry, sriracha, and a few others. You just add a little calcium lactate to your liquid or puree, then make a sodium alginate bath Food Grade Sodium Alginate (Molecular Gastronomy) ⊘ Non-GMO ☮ Vegan ✡ OU Kosher Certified- 100g/4oz , and either spoon your stuff into the alginate bath, or first freeze your mixture in a silicone mold FUNSHOWCASE Mini 24 Cavites Hemisphere Dome Silicone Mold which makes the process a lot easier. I haven't got around to trying the normal spherification because this method works so well. For "caviar," though, I actually prefer agar agar NOW Foods Agar Powder, Pure, 2 Ounce Bottle dropped into a cold oil.

I had bought this product alongside sodium alginate too make molecular spaghetti and the end product came out looking amazing so I would say that both calcium lactate and sodium alginate from this brand really works especially since I used them many times and the end results were amazing
