Very nice Yibin Yacai, Yes, it's quite salty and has a strong flavor, but that's the nature of this particular preserved fermented mustard. Plus, a little goes a long way! I use it for making Dan Dan Noodles (they just aren't the same without this ingredient), and other Sichuan dishes. It brings a nice, funky fermented-umami flavor to the dish. This is not really meant to be eaten as a stand-alone condiment, but rather cooked into foods. I also add it to stir-fries for a bit of extra kick. I rarely use more than a teaspoon (often less) for one portion. As I said, a little goes along way, and it's meant to enhance and blend in, not completely dominate the flavor of a dish. Also note that the date you'll see on the package is the production date, NOT the expiration date! Once you open the pouch, store the rest in an airtight container in the fridge. It will basically last forever there... Highly recommended!

Tastes As expected. Not spicy. A little goes a long way when stir-frying string beans or garnishing Taiwanese beef noodle soup!

Great - and necessary - for dry fried green beans. A re-sealable container would be immensely useful.

What in the world is Fermented Mustard? It is a nice addition to many Chinese dishes. In this case, I used it for Schezwan Green Beans. It adds a lot of flavor to the dish. It's a bit hard to find in town and you have to do a lot of searching to find it. Pretty easy to find on Amazon. There are 5 big packs too so it's a lot of value for the money.
