How long is the shelf life of these products and should they be stored in the refrigerator?

I store mine in the pantry, but they don’t last long. I eat them before they can get old.

What's the shelf life if these ingredients? Is it something that when expire in a few weeks/months/years after purchase?

The fried shallots had an expiration date 3 months from the date I purchased them and at the three months they had begun to become soft and I no longer used them. (I have to say taste wise, I was not impressed with the shallots, very bland). The fried garlic had an expiration date 2 years out and I have been using them for a year and a half and they're still nice and crunchy and wonderful flavor.
