A Versatile Champion for Oysters and Tea Enthusiasts
The Victorinox 44696 oyster knife is a masterclass in precision and durability, effortlessly handling both shucking oysters and delicately breaking into compressed teas like puer cakes. Whether youโre a seafood pro or a tea connoisseur, this tool is a revelation. The razor-sharp, high-carbon stainless steel blade is the starโsturdy enough to pop open stubborn oyster shells with minimal effort, yet slim and agile for carefully loosening tightly pressed tea leaves without shredding them. The bladeโs slight flex provides just enough give to glide through tasks smoothly, reducing the risk of slips or mishaps.Ergonomics shine here: The non-slip, textured polypropylene handle offers a secure, comfortable grip even when wet, which is crucial for messy oyster prep or precise tea sessions. Itโs lightweight but feels solid in-hand, striking the perfect balance between control and ease of use.Iโve used this knife for everything from weekend oyster feasts to daily tea rituals, and itโs held up flawlesslyโno rust, dulling, or wear. The pointed tip is genius for prying into tea cakes cleanly, preserving leaf integrity for a better brew. Plus, cleanup is a breeze; a quick rinse and itโs ready for the next task.Sleek, professional-grade, and wildly versatile, this Victorinox knife is a kitchen (and tea drawer) essential. Five stars for its rugged reliability, thoughtful design, and ability to elevate two very different crafts. A must-buy for anyone who takes their oysters or their tea seriously!

Best oyster knife
This is the best oyster knife for me because it has a thin tip with a little lip that really gets into the small crevice of the opening

Best Commercial Oyster Knife for Larger Oysters
I am a professional working Shucker and have been for over 20 years. I've recommended this knife to many people who ask (for rear hinge oyster shucking only). I've shucked over 1900 oysters in a day on this knife - it has never let me down. Similar to the Dexter Russel, however the non-slip grip makes the huge difference when shucking large quantities of oysters when you hands are wet. Once adept the long blade allows you to pop the hinge and cut the adductor muscle in one sweep even on the largest of oysters such as Malpeque. I am currently testing out other knives with shorter blades for different shucking techniques... but the feel is essentially the same. I replied to another review of this knife here on Amazon. If you are having problems with breaking oyster knives you are torquing the blade too much. For rear hinge shucking simply wedge the knife in good and wiggle it, like you are turning a door knob. You want to feel the middle of the blade (not the edge) that is where the power. It will pop open with patience and technique. *** never use your weight leaning into the oyster to get power.*** Less force = less broken shell. Also less chance of cutting your hand or butchering the oyster itself.

great oyster knife
I've owned a few oyster knives now, and this is my favorite. i like that it's not as wide as some of the other similar ones, so it's easier to slip in the hinge and then go in and cut the top abductor muscle of the oyster. nice sturdy feeling knife with a comfortable handle. i recommend.

The 4-inch boston style is great for any oyster i've encountered
The 4-inch boston style is great for any oyster i've encountered, just make sure you do not use it as a pry bar for difficult oysters! It will break, otherwise great oyster shucker and i have ordered another one after a coworker broke it and threw it away.

Victorinox 4 inch Oyster Knife
This knife is all I hoped it would be. I love he strong non-bendable blade which I use to easily pry open the hinge, then flick it inside the top of the shell to cut loose the muscle attachment. I chose the 4 inch length for the wide range in oyster sizes we have in the markets here in the NW and it works great on the big Japanese oysters from Willapa Harbor as well as the tiny Pacific oysters. I grew up eating Willapa oysters but have only recently learned how to shuck them myself and this knife makes it easy. I've now got my own tiny kitchen midden full of shells like the native americans on our coast once had.

The one to get if you are getting only one.
This works great. Rookie shucker here but I watched the you tube video tutorial and off I went. The blade works like a charm. One small thing is that it may be a little too long for normal size oysters making it a little less safe than the 3 inch blade. If you have to go with one, this would be it to cover all size oysters. However, if you can get two, I'd get the 3 and 4 inch models.
