I have 20cm Cooks knife and 17cm Sandoku knife and am considering to add one more cook's knife. Should go for 14cm or 16cm?

I have the 14 cm cooks knife, which are used a lot for meats and large hard vegetable chopping (like large carrots, swedes & cabbages etc). I also have the 10 cm vegetable paring knife. This is really great for cutting small vegetables, like sprouts, green beans, small carrots & cucumber etc. Hope this helps 😊

How offen should you sharpen knife?

I wipe it through the sharpener a couple of times pretty much every time I use it.
