Incredible knife set
Before buying several of these Robert Welch knives I was using a set I bought off a well known shopping channel. The entire set cost the same as just one of these knives and I thought they were really good knives. I suppose they are for the money, but anyway, then I got Robert Welch knives. I've never known knives so sharp out of the box. They are absolutely incredible knives and unbelievably sharp. I have the 23cm carver, the 17cm & 14cm santoku's, the 30cm slicer and the 20cm cook's knife. They are all superb knives, very easy to hold and just outrageously sharp. They make a really satisfying noise when you use them, like you're unsheathing excalibur or something :). If you want superb quality knives that will last forever then I recommend these.

Carving knife
So sharp. Cuts through the roasting joints no problem

Faultless.
Just so sharp. It is a pleasure to use and just glides through meat. It appears to maintain it's edge which is vital for a good carving knife. A little bit expensive but if it keeps it's edge then great value in the long term.

Great knife
Comfortable to hold, well balanced, very good quality and razor sharp. It holds it's edge well and is a joy to use. I like the Robert Welch knives just as much as my more expensive Sabatier and Yaxell knives. It's made from a German steel, but sharpened with a Japanese angle on the edge, which seems to work well (be aware that you can't just use any old knife sharpener on these knives, because the sharpening angle may not be the same). I use a Minosharp Plus 3 rather than Robert Welch's own sharpener, although I have used a Robert Welch sharpener previously and it was absolutely fine.

These Robert Welch Signature knives ae in a class of their own and are superb to hold, handle sand use. Buy with confidence...a 'once in a lifetime' purchase, so don't spend money on inferior knives! This carving knife cut through beef, pork etc with no problem at all! These knives retain their sharpness and 'edge' for a long, long time, and when you will need to sharpen them, the simple Welch knife sharpener does the great job! Superb knives!
