I see the two options - "portable, frame only" and "corrugated plastic sheets insert" - but what exactly does that refer to?

The corrugated sheets are just 2 blank inserts that slide into the frame. You can print adhesive vinyl and stick It to them for the display, or cut vinyl and do the same. It depends on whether or not you have a printer for corrugated plastic. We typically buy just the frame, as we don't need the inserts, we print our own

What size/type of screw does this require?

The package already contains the screws. please apply for a replacement if the package dont have one. Size of screw - M6 * 35mm

Am I able to use a normal poster (flimsy paper) with this stand or do I need it printed on a corrugated board?

If you order the ones that come with the coroplast board you can glue to it, but no, normal paper won't stay in place in the channels.
