Are these the best quality kefir grains you can get? I want to start with a really good starter grain and keep it going!

I am really pleased with the quality of these kefir grains. They make really good kefir, grow really quickly and survive being frozen in milk when you have too many. I have given my multiplied grains to three friends who are delighted with the results and are seeing an improvement in their individual health issues. I use organic milk and can recommend highly these grains. Maggie B

Is St Helen's pastuerised goatd milk homogenised? I thought all shop-bought milk was homogenized? pls help as not sure if my grains will work now.

Short answer is yes - to feed your grains it is best to use RAW milk cows or goats also sheep's. I use raw goats milk and buy on line from a company called - RED23  good luck hope this helps

What is the difference between water and milk kefir grains?

MILK Kefir is similar to yogurt in taste and appearance, but contains vastly greater amounts of living cultures. The consistency of kefir can range from slightly thick milk to yogurt depending on the conditions and how long it ferments. Kefir is most commonly consumed as a beverage or a smoothie base.Water Kefir is a wonderful mildly zesty fermented sugar-water beverage. It can be likened to a natural, light and refreshing soda - perfect for a healthy drink alternative.Fermented products such as kefir are considered functional foods because they offer enzymes, pre-digested nutrients, amino acids, vitamins, minerals, calories/energy and billions of probiotics. Probiotic pill supplements contain just one or a select variety of bacteria, and usually that's it. It's always better to eat something in its whole form when possible, because each part makes the other more digestible.

I find it hard to obtain non-homogenised milk, so I used normal 1% fat milk, which seems to work OK, why your emphasis on non-homogenised milk?

I've no idea about this either! I started mine off with organic full fat to build it up after it's journey and have weened it down to Asda's basic semi skimmed. I've always used fresh tho, not UHT and haven't gone down to skimmed as the fat content does seem to change the thickness. I simply couldn't find any non-homogenised at all. I did buy 2 of those self-published style books about Milk Kefir, so I should go and have a look what they say............. One is very clear that it doesn't matter what you use, as long as it's fresh (ie not been in your fridge for a fortnight). The other talks about it in more detail. They favour Fresh Pasteurised. UHT apparently makes it harder to get the pro-biotics back in. Of homogenised they say both can be used. Homogenised has been treated to prevent cream from separating and rising to the top. Kefir made with non-homogenized milk will leave a top layer of fermented cream. I've never noticed this............ I should credit the book to be fair - that bit was paraphrased from 'Fermenting vol.3 Milk Kefir' by Rashelle Johnson.
