Exceptional book on chocolatr
This is my go to book for a fancy dessert ...it has all the basics laid down clearly .. and then fantastic usage of the same basics in extraordinary desserts .... i have made almost half of the recipes .. and theres not a single one which has dissapointed me .... i would recommend this hands down !

a hidden gem
I have bought many of the 'big name' chocolate books available including the ones you will be pointed to when you do a search in this category(notter,curley etc) but this is both the most comprehensive and best of them all.content,photos,binding are of exceptional quality,an excellent dvd is also included,i only came across this book by accident,it does not feature usually when searching books on chocolate,as you are reading this review congratulate yourself as you like me have been lucky enough to stumble upon a hidden gem.

My favourite recipe book!
I have several other recipe books mostly proffessionals this one far the best.I'm not a professional I just like to create sweet masterpieces that everyones craves for.Valrhona has put their chefs to work and produce a really great book it's more than a recipe book it explains a lot how to be done and why.It's all about chocolate but not only.It can be used by home makers or professionals.Just keep in mind for excellent taste use the best ingredients!

Chocolate Heaven
Reading this book is better than reading most novels. Wow. Beautiful photos and that make me want to try every recipe. The instructions are clear and the ingredients are common. There are a few fun new tools to find, but that is part of expanding my knowledge and kitchen base...new tools like stainless steel rulers which hold up what I would describe as a long, thin chocolate ganache tart. Very clever and not hard to do. The recipes I've tried are exquisite and I can't want to cook the entire book...so much to learn and wonderful chocolaty foods to enjoy. This book is a masterpiece.
