Love this gluten free flour blend!
I discovered this flour first at Gluten Free Joe's which is a specialty gluten free food store located in the Olympia area of Washington state. The owner told me it was their family's favorite flour blend and I can see why after using it to replace flour in some of my favorite recipes with excellent results. (You DO have to add xanthan gum in the amount best for each type recipe as this blend does not contain any since different types of recipes work best with different amounts.) I made the mistake of running out of Mama's right before our family Easter get together but since I had an unopened bag of Namaste flour blend (which is also highly rated) so I did not think it would be a problem. Wow, was I wrong! I made two of my favorite recipes and both had to be tossed because neither turned out right. I was so disappointed to have nothing to bring as well as the fact I had wasted over a pound of butter, many eggs, lemons, etc. Needless to say, I learned NEVER to run out of Mama's Coconut blend again!

Delicious, Great 1-to-1 substitute in gluten-free baking
I absolutely love this blend. It's the best one-to-one gluten free flour substitute I've found and it works well in most recipes. I use it in brownies, cookies, quick breads (like muffins), and in GF-adapted yeast recipes. It has good texture and a very light tangy flavor.As others have noted, this is *not* "coconut flour", but a blend that *includes* coconut flour. You can't buy it expecting a low carb product (as straight coconut flour would be) and you can't use it in recipes meant specifically for coconut flour. ... It's a mix of flour and starch that works well for gluten free baking however.I find this makes particularly great waffles. As in, when we serve guests who are unaware that they happen to be eating gluten-free, they beg for the recipe. :)

I love this blend (updated)
I have bought this blend at least 4 times now. It is my go-to flour blend for baking. The coconut flour is such a nice, airy flour with minimal coconut taste. I use this for making gluten-free pancakes every sunday using Martha Stewart's basic pancake recipe (subbing this flour for the wheat flour and adding 1/4 tsp of xanthum gum). These are the best ever pancakes.I've also used this to make waffles, muffins, and my daughter's birthday cake.Update: Oct 2022. I still reach for this blend first when baking everything but a yeasted sandwich bread. After at least 4 attempts, I determined it's too light to hold the structure needed for my bread recipe because of the rice flour. Also, it's cheaper if you buy it directly from their website.

This is one of the best coconut blend flours. I use it to make pancakes, which taste more like the pancakes I remember when I was able to eat wheat/gluten. I LOVE it that it does NOT contain XANTHAN GUM! Thank you Mama!

Guess I Need to Pay Closer Attention
I bought this to replace my supply of coconut flour and was excited because I got this so cheap. I am on a high fat/high protein "Primal" diet and I make waffles and tortilla/crepes with coconut flour.Unfortunately, I could tell something was amiss when I opened the product as the consistency of the flour was very....floury. Real coconut flour is loaded with healthy fat and cannot take on such a consistency.I looked on the bag and saw that the produce is a Coconut Flour >>>BLEND<<< with the #1 ingredient being Rice Flour! This is why it can be sold for so cheap...because the majority of the product is made from cheap, powdered rice. Coconut flour is more expensive.You should know that rice is a grain and thus is a carbohydrate. It might be gluten free, yes, so you don't get those nasty effects, but it's not a "low carb" food which meshes with "Paleo" or "Primal" approaches to eating.I'm eating the stuff slowly, as I'm not going to throw it away and waste money, but I won't be buying it again.

Love this blend especially since I have a gluten allergy
Love this blend especially since I have a gluten allergy. This is not a good option for people o. The Keto diet because it has too many carbs. It does not perform like a true flour and recipes do not turn out.

BLEND!
Oops! My bad! This is a BLEND! I wanted coconut flour ... ALONE. Well, it's an okay mix of rice, potato, and coconut. It doesn't taste bad and seems complete as far as using it as an APF substitute (one for one). Give it a try if you wish; it's not bad, it's just a blend and I missed reading that until I got the package.
