Better than your expectations
2 kg of carrots chopped and fried in 30 minutes. Could not be happier. Buying a second one for my mum.

A great mandolin, but hang onto your fingers.
Very nice piece of kit. But it will have your fingertips off before you've even noticed they've gone. It slices a veg so rapidly down to nothing that it will move on to slicing you down to the bone in seconds. I bought a level 5 safety glove - it sliced the fingertip off that too, luckily just missing my actual finger. Have returned the glove (thanks microplane - I'm looking at you...) and ordered one made of stainless steel wire. Don't even think about using this without a safety glove, and keep the glove on whilst washing and drying the thing. It is utterly lethal. Presumably a professional chef is less of a clutz than me. But you have been warned! Great for juliennes, gratins, that sort of thing. You can slice MUCH thinner than with a knife or even a Kenwood slicer attachment style thingy.

The only game in town...
There's a reason why this is the standard in professional kitchens - it's in a totally different league to my previous run-of-the-mill mandoline. It's sturdy, easy to adjust, easy to clean, and produces outstanding results. Well worth the extra outlay.BUT - the blades are so sharp that a moment's carelessness could land you in A&E with a serious injury. This is a very real danger. So I've invested in a standards-compliant cut-resistant glove, and together with proper technique I should be safe. I suggest you get the glove from a specialist trade supplier - the knock-offs available on Amazon don't inspire confidence.

Better than OXO
Originally purchased the OXO mandolin, which had a lot more going for it, other than the most important item, the blade. The difference between this blade and the OXO is chalk and cheese. The mandolin is pretty basic, feels pretty cheap and overpriced compared the OXO, but it performs really well, the blade is very sharp so makes the whole experience satisfyingly good. One last note, the hand guard is fairly useless, would buy a stainless steel glove, which IMO is a better option than guards in the first place….but either way, would never use without one or the other if you care about keeping the tips of your fingers attached.

Exactly what I needed
I've dithered for years over buying a mandoline, and I wish I had done it sooner. This one is pricey, but really sharp and robust. The blade is removeable, so I will be able to [carefully] sharpen it when it dulls. Replacement blades are also available. Easy to adjust thickness with large screw mechanism. Easy to clean - assuming you are just using it for vegetables etc - rinse under tap with a sponge (careful with that blade). Very happy indeed :)

The Best!
Honestly this is the best kitchen implement, it's incredibly useful. We eat so much more raw veg as a result. It transpires that the kids love raw veg rather than cooked - who knew?!!! It's quick , easy and simple to clean. I bought the global knives' protector to store the replacement blades

The Rolls Royce of Mandolins
Any household who dabbles in cooking should have one. We use ours several times a week. We can slide the thinest cucumber pieces ever. Superb product. Blade last a very long time. We just replaced ours that lasted 4 years.
