Review: Much easier and more efficient than a water bath canner - I will be making comparisons to a traditional water bath canner (like the granite ware ones), and will state whether it’s a pro or con. This canner uses a lot less water, which in turn, requires less energy and time to heat (pro). It’s lightweight, lighter than my granite ware even without water and especially with water. That means emptying the water after canning is much easier (pro). It has a max processing time of 45 minutes. It shouldn’t be used to process over that time, or the canner may run dry and cause damage. That makes it tricky when canning tomato products, which can take 35-50 minutes under 1000ft (processing time gets longer the higher the elevation). I personally do not risk it, and only can pickles and fruit in the steam canner, and use the water bath canner for tomatoes. If all you’re canning is pickles and fruits, this is the superior choice. Rather than waiting 30-45 minutes to heat a water bath canner for something that only takes 10 minutes to process, this is the better solution. If you’re only canning tomatoes, don’t buy this canner (con). Size wise, this holds 7 quarts, same as my water bath canner. Some miscellaneous comments: The indicator knob on top has an odd design. You’re supposed to calibrate the canner before you use it the first time and at the beginning of every new canning season. There are instructions in the manual on how to do that. But when you look at the indicator, it has those green zones for your elevation for when to start timing; those don’t mean anything, they’re useless background. You have to make a mark when you calibrate when it’s full of steam, then you start the timer. I question why they added those green zones when it actually has no meaning. (as shown in the picture, I marked it too early, but I know to start time when it goes past the line I made) I’ve used this canner about five times, and the inside changes color based on where the water was sitting. The rack and the bottom pan look different than when I initially received it and used it for the first time. It seems to be just a visual change, and hasn’t caused any problems.

But as I clicked "purchase" on a water bath canner, I started thinking about my back issues and hauling a bunch of water to and fro, and the fact that I need a new oven and I want a ceramic top to replace my gas, and there are studies that have found steam canning to be safe when done correctly. So, I cancelled my water bath canner order and sent out for this one. Within two weeks, I had canned around 60 quarts of applesauce (My kids love the stuff with their dinner and people kept throwing apples my way. ) and didn't have a single issue. Everything sealed, nothing broke during processing, the canner was easy to use and everything processed beautifully. I love the gauge at the top that tells me when to start timing according to my elevation and I love how little water sputtering there was (my last canner spit water everywhere, even when I had filled it correctly), and I love how easy it was to move and clean and refill. Yeah, I made the right choice. Steam canning has served me well and I think it will be even better now with this truly awesome canner.

### ⭐⭐⭐⭐⭐ Much easier and more efficient than a water bath canner

I will be making comparisons to a traditional water bath canner (like the granite ware ones), and will state whether it’s a pro or con. This canner uses a lot less water, which in turn, requires less energy and time to heat (pro). It’s lightweight, lighter than my granite ware even without water and especially with water. That means emptying the water after canning is much easier (pro). It has a max processing time of 45 minutes. It shouldn’t be used to process over that time, or the canner may run dry and cause damage. That makes it tricky when canning tomato products, which can take 35-50 minutes under 1000ft (processing time gets longer the higher the elevation). I personally do not risk it, and only can pickles and fruit in the steam canner, and use the water bath canner for tomatoes. If all you’re canning is pickles and fruits, this is the superior choice. Rather than waiting 30-45 minutes to heat a water bath canner for something that only takes 10 minutes to process, this is the better solution. ### ⭐⭐⭐⭐⭐ Safer, Faster, Just What I Wanted!

I just tested this product - I did not can anything since it's the middle of Winter here in Wisconsin, but I just had to see how it worked. Thought it was a good idea anyway to give it a whirl before I actually had things ready to process. It takes just a bit less than 3 quarts of water to fill it to the correct level - SOOOO much less than a water bath canner! It came up to temp in about 15 minutes. I would guess that it takes at least 30 to 40 minutes to get a full water bath canner up to temp. All that extra water and all that extra energy to heat that water is why I got this steam canner! You know you are ready to start processing when the temperature gauge is in the green. You can't see it in the pictures - the gauge is built into the handle on the top. I've attached a picture that shows the gauge. When I was done with my test, I just lifted the base by the sturdy handles and carefully dumped the hot water into my sink. So much safer to have just that small amount of water rather than gallons and gallons! It also struck me that it will be so much easier to remove the jars when they are done. They will be sitting so much lower compared to up in the wire basket of a water bath canner. My last comment is that with the current model (purchased 02/2015) they have solved a problem that some of the other reviews have mentioned and that was an unstable, wire like base inside the canner that allowed the jars to "tilt". They recommended getting another part for another canner that was flat so that the jars did not tilt. The canner I got has a nice flat, sturdy metal "stand" that goes in the bottom of the canner to hold the jars above the bottom of the canner. Jars setting on that sit perfectly flat, so the other part that was recommend is no longer needed. 07-26-2015 Just starting to do some canning for the season - processed some pints of Blueberry Jam this morning - incredible! I was done processing and had the jars cooling and the canner put away in the time that a water bath canner would have taken to come to a boil to START the processing!! And it was so nice to grab the jars from that low base rather than from the basket at the top of a water bath canner. And I should mention that all 9 pints sealed. ;-) Next up will be processing Dilled Beans! (those are pickled - so are not low acid, so do not need to be pressure processed).
