Good book, great recipes
If you want to learn how to bake bread, this book is about as good as it gets. All the recipes clearly define technique, which is far more important than just the required ingredients. Great color photo's demonstrating what you are trying to accomplish, and a fantastic range of recipes to keep you busy in the kitchen. I purchased the spiral bound version. I'm giving it 5 stars.

Clearly Written
I’ve learned a lot about bread baking from this sectioned for easier reading and understanding book. I was hesitant to order this Big Book of Bread because had returned another bread baking book by an author because too wordy. This Big Book of Bread is clearly written with excellent photos.

Better, more voluminous/more informative than I expected
Too bad the publisher doesn't show you more examples of the recipes and gorgeous photography. Had I realized the huge amount of recipes, I would have gotten this book a long time ago. As a professionally trained baker, I continue learning a lot from this book. All the recipes and teqchniques are clearly shown and attainable for any home baker.Everything is well explained and you're not left hanging with some vague terminology. The photography alone is worth buying this book. Flip through it and you won't be able to resist making some of the recipes. They claim 125 recipes—it sure feels a lot more than that.I also appreciate that nowhere do I find references that you should buy from King Arthur. This is not a vehicle for them to push their products. There is a small section about them but that's about it. Now I have even more respect for that company that focuses so much of their business on education. (they got killer videos too).This is definitely one of my favorites cookbooks and will have a prominent spot in my kitchen. It will push me to try different type of breads. Thank you King Arthur for creating this!

Lots of recipes
I like this book, but as a relatively novice bread baker I find it lacking in something I consider important... a troubleshooting guide for my bakes.What does it mean if my bread splits at the bottom, despite being well-scored?What if my dough isn't rising after an hour proofing despite warm temperatures?Why is my bread crumbly?Why does my bread have large holes in it?Many more questions can be asked. My main issue seems to be underproofing, even when it's doubled in size and properly scored, it splits along the bottom or sides. It still tastes good and it must be close because the crumb is usually good, too. I just wish there was a guide with pictures in the book rather than me having to search the internet.Otherwise, this book is pretty good. Lots of recipes and I've tried several. Right now I'm focusing on sourdough, though, and would like more sourdough discard recipes. The discard book I bought has lousy recipes (not this book) and this book has very few. The pretzels were pretty good, though. For a novice sourdough baker, I would like a better definition of when to use the sourdough starter in recipes as a starter because it's a bit fuzzy on when it is defined as discard and when it is still starter. Also, I noticed only a few recipes specify that starter can be used instead of yeast when I know it can be used more widely. King Arthur does have some on-line, I just wish they were included in the book.

Great recipes that require low effort
Recipes are straight to the point, effective (which proves that they were thoroughly tested by KA's Test Kitchen), and results are great. I've already tried some of them, like Pain de Campagne and mushroom/cabbage dumplings, and they yielded awesome bread!
