I don't know if this will help but near bottom of page, under where the 4 questions are asked, then where it say "product description" it says the following: To earn the “reserva” distinction, the vinegars must be aged in oak casks for at least two years. The Arvum solera is more than 10 years old.

Is the 8 on the front label meaning 8% acidity?

Yes, that's exactly what it means...8% acidity. But, if you really want to try something different and great, order some Oomi Plum Wine Vinegar. Great salty taste. Great on fresh summer tomatoes. I buy it by the case so I always have it around.

Is this made with malt vinegar?

I do not see any reference to malt vinegar on it’s label
