I was able to caramelize the onions on the stove, add the liquids, spices and pre-soaked beans and then pop it into the oven before going to my doctor's appointment. When I got home, the beans were done perfectly! Way better than the crockpot (because most of the liquid was gone) and they tasted great - and the Dutch oven cleaned up easily afterwards. When making things like Tamale Pie or deep dish pizza, you really need cast iron to get the right texture when you're done. This purchase was worth every penny! (Also, just FYI, the rim of the pot and the rim of the lid are the base cast iron - I gather it's to avoid chipping the lid or the rim when the lid goes on and off. The company says it will not rust as long as you don't leave it sitting in water, but instead dry it off thoroughly before putting it away. So far, so good.)
