### ⭐⭐⭐⭐⭐ Great for small batch canning

I have one of those huge enameled water bath canners, which is great if you're doing a dozen quart jars. But I don't always need or want to can that much at one time. This allows me to can four or fewer jars if that's all I need, and works on my smooth top stove, where the big canner has to go on the grill outdoors. It also needs much less water, which makes it lighter and easier to use.

When calibrating this steam canner, the needle indicator went past the marked increments on the dial. I contacted the company and they said it can go well past the marked letters, and to proceed with the test. The company did say to check the steam hole with an instant read thermometer when it reached the 10 minute mark of testing and it should be between 209 and 212 degrees. I did this and it was 211 degrees. I feel this is the best indicator of safe canning temperature. This canner is so much easier than a hot water bath, used so much less water and heated up pretty quickly. I did make a dot on the indicator with a marker where the high temp was reached as the little red arrow does not stay in place. The company was very quick to respond when I contacted them. This canner is a great value for the money and I am looking forward to preserving summers bounty with it.
