I felt compelled to leave a review even though I paid full price (not cheap) for this product. The ingredients are first class, the flavors are delicately nuanced, and the heat levels range from mild (Southern Peach and Vidalia Onion) to very hot (Tres Diablos). Here are some observations about each individual sauce:1. Southern Peach and Vidalia Onion: A very mild sauce with lovely notes of peach and sweet onion. Sauce has a slight sweetness to it. Pairs very well with any type of fish, especially poached or lightly sauteed in butter with no other spices. Also goes well with chicken.2. Garlic & Pepper Fusion: Low medium to medium heat with distinct roasted garlic flavor that complements and enhances the flavor of cayenne peppers. Goes well with roast chicken, pork or beef (nice on a burger). Be careful though, the flavorful sauce may at times overpower the flavor of your meat.3. Chocolate Habanero: Medium heat with bold and sweet flavor profile. I made the mistake of assuming that this sauce contained chocolate. Later realized that a special type of habanero pepper, a 'chocolate habanero' was used, enhanced with brown sugar and subtle notes of garlic and onion. Reminiscent of a very complex barbeque sauce that pairs well with smoked meats.4. Tres Diablos: VERY hot sauce. When consumed on its own, you will first notice a nice peppery flavor before the heat kicks in (about 3 seconds later). I discovered that it tastes fantastic on steak by enhancing the flavor of the steak rather than overpowering it. The ones I tasted were "Fusion Garlic and Pepper Hot Sauce", "Chocolate Habanero Pepper Sauce" and "Tres Diablos Jolokia, Scorpion, Habanero Hot Sauce". These sauces run the gamut from a moderately mild garlicky sauce to a slightly restrained, but flavorful all-pepper flavor sauce. These sauces aren't afraid to put flavor first, rather than just try to beat you down with ridiculous heat. That said, here are my first impressions:1) Fusion Garlic & Pepper Hot Sauce    Initial Nose - Garlic and vinegar with a light Cayenne sharpness    This is definitely a cayenne-based sauce, as the heat is right up front, but moderate in this blend. There is a good amount of garlic with not too much vinegar. It is slightly salty. As mentioned, the heat peaks quickly, then mellows somewhat and has a nice linger, rolling off slowly. The garlic also sticks around.    Heat - 5.5    Flavor - 7.5 (maybe a little salty for my taste)        Good on steamed white rice, eggs, hash browns or home-fried potatoes.    Sweat indes: 3    Runny nose index: 32) Chocolate Habanero Pepper Sauce    Initial nose - Vinegar and light Habanero scent        This sauce starts out sweet with a brown sugar note and nice pepper flavor - only slightly smoky. As is typical of Habanero sauces, the heat comes on after the initial flavor and builds to a moderate level, lingering for a good while as it tapers off slowly. Not salty.    Heat - initially 3 - builds to 6    Flavor - 8    This sauce is good on smoked meats or as an add-in to a red barbecue sauce (not a mustard sauce). Complements Vidalia onions nicely. Good on chicken or fish tacos.    Sweat index: 4.5    Runny nose index: 4.53) Tres Diablos Jolokia, Scorpion, Habanero Hot Sauce    Initial nose - peppers with light vinegar    From the first time you smell the sauce, you know it means business. It's good blend of the pepper flavors with a light sweetness from the peppers, themselves and a light vinegar flavor. There is a trace of tomato, but very muted. Heat starts at a moderate level then builds to a decent burn level and hangs around for a while before tapering off just in time for you to want more.    Heat - initially about 5.5 building to 8.5    Flavor - 8    Good on steamed white rice.  Nice addition to a bacon-cheeseburger with onions. Likely too hot for most breakfast foods.
