Q: How do you know witch measurement you use ?

I check the engine manual to see what the clearances are suppose to be , the select the gauge thread that will fall within the parameters of the engines clearances. cut about inch of thread for each journal put thread on journal torque down to specs . then take it apart and measure with paper chart on package. be sure to torque to specs when measuring to get proper bearing crush.

Q: Is there enough material to do the crank and rods on a Chevy small block?

I think so. I did the 2 cam shafts in a Toyota 3.0 and it has 5 bearing caps per cam and I had some left over
