Are these nuts pasteurized?

It does not say Pasteurized on the label.   I doubt that they pasteurize them.   RAW =  RAW. Pasteurization harms the nutritional content.   They are full and practically Unbroken.  Nice.

Question 2

How long is a bag good for before expiration?

I bought a bag on April 13, 2015 and today it is Sep. 2, 2015, just shy of 5 months later.  I keep them in my refrigerator veggie crisper drawer.  I have a FoodSaver vacuum sealer, so cut off a corner of the bag, pour out the amount of cashews I want (usually one cup, to make my cashew milk), and then I just press out the excess air and seal (not vacuum) the bag again.  Toss it back in the crisper drawer until next use.  I suppose you could do the same via freezer.  I could totally see portioning out and freezing them with a vacuum sealer, and I might do that with my next bag, but I didn't with this bag.  So far they have remained quite fresh, not gone rancid, make awesome milk (which is what I primarily use them for), and now that I am getting down to the last couple of cups' worth I will be ordering this product again.

Are these cashews processed on equipment shared with peanuts (allergy concern)?

The package did not state manufactured on the same equipment, but yes to same facility as peanut and other tree nuts. My son has a peanut allergy and we've used these for a few years.

Question 4

are these truly raw or steamed or boiled in oil to rid them of the toxic resin inside the shell?

Accepted Answer

Urushiol is a chemical found in poison ivy, and it is present on the leaves of the cashew tree as well as in the raw cashew shell. Even the "unroasted' varieties are steamed to release urushiol from the nut and make it safe to eat.
