GMOs cannot be used in organic foods. The Organic Trade Association says: “The use of genetically modified organisms (GMOs) is prohibited in organic products. This means an organic farmer can’t plant GMO seeds, an organic cow can’t eat GMO alfalfa or corn, and an organic soup producer can’t use any GMO ingredients.”

No, not at all. The cap has outer and inner segments. The inner cap has an easy pour spout. The outer cap snaps to close the bottle securely.

Should this be refrigerated after opening, like nama shoyu?

Most soy sauces need to be refrigerated after opening. That’s what I’ve done with my bottle.
