How tall are the legs? Can they be swaped out easily? Are they single screw on or multiple screws?

Single screw in. As long as the screw size matches, I’m sure it could be swapped out.

What is the size of cubby storage that's open on both sides?

The two small storage spaces on the left are the same size, 12*9.5*8.7 in.

How thick (Diameter) are the bottom of the leg? I need to buy the correct protectors/sliders for the table to protect the hardwood floors. Thank you

I think one inch would be safe. I picked up one leg and slipped a tape measure under it and when I set down, it was close to one inch. I’m really happy with this table!
