I have a gas stove. Even if I use my ceramic coated cast iron stockpots or Dutch oven, I was constantly having to stir while simmering. These were thick base pots to begin with. I ordered a set of three of different sizes and put them to work. First off, they do tend to spread the heat evenly throughout the bottom of the pans you’re using. I was far less concerned about a hotspot in the middle so I can report that it works. IMHO the advertising about saving energy and therefore money, well I’m not quite convinced. Your gas stove has to heat theoretically twice the thickness of metal to reach the desired temperature. This takes longer and burns more fuel. Once it’s up to temperature, then it balances out then uses the same energy. I’m not a metallurgist, but this product is mainly a thick sheet of aluminum with what they claim has copper on top. Personally I think any thick material would accomplish the same thing. With that said, I still would recommend using it. It is well made and easy to clean. I even have the smallest version for over-landing. It comes in handy on my butane camp stoves. I hope this helps.

This product is great. It really distributes heat perfectly and even the far edges of my 11 inch pan are showing bubbles from simmering. In the beginning, it does need about 3 minutes for it to get so hot from the fire that it starts transfering it to the pan, but from then on it's smooth sailing all the way. Also, when you turn the fire off, it will still continue to simmer for about 3 minutes because of all the accummulated heat, so be sure to turn the fire off earlier in the finishing stage of cokking. I would give it 5 stars, but I have notices a peculiar smell (sort of like plastic?) and I don't know why that is. Edit: I have asked ChatGPT and it says that it is common to smell that kind of smell in the first few uses. I have now tried it two times. Will see what happens with more frequent use. I'm suspecting it will go away.
