Review: Very good pan, arrived very quickly - Very good pan at a reasonable price, worked perfectly well, didn't stick, even on the fire. There is a factory anti rust coating on it which they advise you to boil water in it to remove but i found it wasn't enough and needed a scourer and an abrasive cleaner. Next time i'll try the ash and water paste trick to protect the bottom on the fire because it's a job to remove the soot. After washing i dry it 15 mins in the oven before oiling, it helps. Lemon juice removes the brown marks. It takes a little looking after which is fine as I don't use it every day. Plenty big enough size for 6, we had leftovers. Not flat enough for a ceramic hob.

The 2nd photo shows the cooked Paella (which was slowly turned/cooked over the three burners adding in the seafood towards the end), and then the 3rd shows the pan (after an all night soak on the hob) after having replenished the seasoning using the above process, but this time more selectively using one burner to ‘patch in’ & brown the areas needed. Do this after-use every time and the pan will gradually gain a better seasoned coating.

**Q: Is it metal**
A: hi cody, it is carbon steel, and prone to rust.. they recommend a stainless steel version if you can find one as it does not rust as easily as the carbon steel version--hope this helps

**Q: What size burner would you use for this pan?**
A: Hi Cheryl, Some of my ancestors were Albrechts.  They came over to the U.S. with William Penn.  Regarding the paella pan, I use it over an open fire.  I added metal brackets on a metal fire pit to securely support the pan and build a fire that covers the bottom of this large pan evenly.  When the fire is initially intense I cook the chicken turning it so that it doesn't burn and as the fire diminishes I add the additional ingredients and the paella rice.  Once the rice is stirred-in no further stirring should be done.  I also have a smaller pan that covers two burners on my gas stove.  I normally light both burners and then regularly turn the pan to even out the heat when I make paella indoors.  I think a large round barbecue grill would probably work ok but I would make a wood fire rather than use charcoal, for the authenticity.  I fixed a large paella on Kentucky Derby day for about 25 people.  Everyone enjoys watching the progress as ingredients are added and can't wait to dig in when it's ready.  Bon appetite!

**Q: During my first use the pan warped. This made all the liquid flow to opposite sides. I was careful not to have the heat up to high. What is issue?**
A: I used mine on top of my 22inch Weber grill . heat was over 600 degrees. But I always had food in pan. Never empty. Mine never warped...

**Q: how thick are these pans?**
A: Thick enough that it doesn't bend, my guess would be 1/3 inch...minus a little..sturdy that when pan was fully cooked very heavy and had to use a strong person and could use 2 people.

### ⭐⭐⭐⭐⭐ Needs specific care and handling after each use

Great pan but requires some effort to keep in tip top condition. Follow instructions before 1st use - fill with water and bring to a rolling boil. Carefully discard the hot water and thoroughly dry I used a T Towel and kitchen paper towels. BE CAREFUL DISCARDING THE HOT WATER IS VERY TRICKY TO HANDLE AND AVOID SCALDS. Then you need to season it by rubbing a very thin coating of oil all over it inside and out (avocado oil or grapeseed oil is best). Then is ready for use. Soak for 30 mins after use the clean and always thoroughly dry and re-season pan. I always store by wrapping in brown paper and a plastic bag. I know all this is a lot of work but my pan is still in good condition after a few uses and no rust. P.S I got all these tips from research on the Internet.
