Are the beef curls rawhide?

No, they are Beef trachea cut up into about 1 inch rings, my dog absolutely loves them.

What part of beef is used for beef curls?

I’m unsure which part of the cow they come from but interested if this would make a difference? From memory the consistency was similar to pigs ears but I guess could have come from anywhere! My dogs didn’t mind though! ;-)

How many pieces in a pack?

Approximately 3 or 4, sorry over 1 year since I purchased this item.
