Q: can the lid stay open without stepping on the pedal?

Yes. This can be achieved two ways. 1) Step on the peddle and then open lid fully toward back of the can. It will remain open till you move it toward the close direction. It will close on its own at this point. 2) You can open by hand and move lid to fully open toward back of the can.

Q: do the bags show when lid is closed?

I've only had mine for a few days and haven't actually used it yet because instead I'm practicing with the same issue you're interested in--not showing the bag! I've found that it's doable and probably something that will come naturally enough to not be annoying. Here's what's worked so far: overlap the bag around the inside can, from front to back wrap it tight with several inches overlap and tuck the excess into the hole. Let the can slide into place and press the lid down to make sure it's hiding the bag.
