How many packets make up one of these bags?

if you buy the powder form on package.. but goes long way. i would suggest the other kind, comes in a hard chocolate form. i think taste is better. you break off what you want..

How's the shelf life on this?

It never lasts long enough on my shelf to tell you. Love this product.

So looking at the ingredients, the supposedly quintessential cinnamon taste in Mexican chocolate is artificial?

I don't really know if it is artificial cinnamon, but you CAN taste it. I love this Mexican chocolate because it reminds me of the hot chocolate my mother made for us growing up. I am Mexican-American 1st generation, and this tastes like authentic Mexican chocolate, and it is delicious!
