Can more than one person use it or would you need one each?

Depends how you use it - if paired to a sports watch it will pair to more than one so you could use it on separate runs. Watch out for overly eager connection to one watch or the other if you run together. To use the stryd phone app and see more detailed stats on the stryd website you'd need one pod each.

Do you know if this would work at all on a lifecycle spin bike?

No. This is a power sensor for running only.
