For decades I used a combination of teflon and silicone baking sheets for cooking and baking until I learned Teflon is harmful to your health, especially if the teflon seal is scratched, while silicone baking sheets don't clean up very well and end up looking horrible after a month or so. I finally splurged and bought these stainless steel baking sheets and am so happy I did. They still look amazing after months of use and clean up well, though I do recommend you don't use steel wool to clean them. Instead, soak them for a few minutes and then use the same type of gentle scrubber you'd use for your cast iron pots & pans. I don't only use them for baking and cooking, I also use them for sprouting nuts & seeds in my mini greenhouse. They provide a soilless sterile environment. All you need to do is spray your nuts & seeds with water a few times a day and voila, you have microgreens and sprouted nuts & seeds.

We use the toaster oven for everything, and I've found I need 3 trays so that one is clean at any given time and for every purpose... the original one is pretty beat up, and is used for battered frozen fish, a newer one for baking brownies or scones in, and this shiny new one is for warming up croissants and buns. The theory is "saturation level", like i have to have 4 pairs of scissors and 3 hand pruners, so I can always find one when I need it. Anyone under 70 may not understand, but so far the plan is working LOL>>. This is the second one of these trays I have bought, they are good.
