Best low carb pasta
This is the best tasting, reasonably priced low carb pasta I have found. It comes in several varieties, is well packaged, and goes on sale periodically, at which point, I stock up!

Great Pasta
The only thing we have noticed different in this pasta from one with higher carbs is that it takes slightly longer to cook. Same taste, same texture, and the portions are reasonable.

Good tasting pasta
Although there are other low-carb pastas available, this one is higher carbs than some of them, but tastes very close to regular pasta you’re used to eating. It’s a bit chewier and al dente and you have to cook it over 15 minutes, but it is close to the taste (and near texture) of the high carb regular pasta. Not sure if you could cook it longer to be more tender. I’ve only cooked once to go on a meat sauce. 16 net carbs is much better than 40 of regular pasta. So I recommend it even though, like the other low carb pastas, it’s very expensive. But if you’re on a keto/low-carb diet, and you don’t eat it often, I think it’s worth the extra cost. Update: I have cooked this pasta now three times. I find if you cook it longer than 15 minutes, until the texture you like, it is soft and similar to regular wheat pasta. As a matter fact, I can’t tell any difference. I don’t think it’s that expensive now compared to some of the pastas out there that are $25 and $30 for a couple boxes. So I’m going to order the elbows next and make some low-carb yummy mac & cheese. I can’t say enough good about this brand of pasta. Please do not stop making it. It is a godsend for us low carbers.

Great flavor for a non-carb pasta.
I'm eating no/low carb these days, and one of the things you really miss is pasta. I had tried a spaghetti made from "hearts of palm" before and it just really didn't taste right. It tasted like something ... just not pasta. The Carbe Diem!, Spaghetti has a great taste. The only thing is it, it's awfully hard. It didn't "soften up" when boiled and mixed with sauce like regular spaghetti. Don't get me wrong ... I ate every bit of it and the leftovers the next day for lunch. Flavor was great just ... too hard.

Reasonable price for a healthy product
Tastes like pasta. Cooks up just fine and tastes great. Low carb makes it a healthier pasta if you are trying to loose weight or reduce your blood sugar.

Amazing Calorie-Conscious Solution
I am an Italian-American trying to lose weight. I eat a varied diet even with calorie restrictions, but the one thing I struggled with was pasta. I could not make traditional pasta work for my calorie goals and also have it fill me up (two ounces is just not enough). I tried so many alternatives and they were terrible. And it sucked! I really missed pasta nights and was concerned that depriving myself of something I love so much was ultimately going to torpedo my weight loss efforts. Carbe Diem is great because it is actually made of wheat. The calorie count makes it doable to have a double serving (4 ounces) and have it fill me up and keep me on track. I love that I am getting lots of fiber and protein, both which can be a challenge on this few calories. It feels like a real treat but I am full and satisfied. The price can be a bit steep if you’re trying to feed a crowd but for me eating a double serving per week, it’s totally worth it. I highly recommend following package boiling times: this wheat takes longer than you think to reach al dente.

It so far hasn’t raised blood sugar Levels. Tastes as good as any spaghetti pasta

Low carb pasta
We tried this brand of low carb pasta, It tasted just as good as a regular pasta. It took a little longer to cook, but the taste and texture was great. It did not get a mussy texture. It however is overpriced! If making a product that is better for you, please do not overcharge.
