Absolutely delicious!
Iโve tried all the low carb, plant based, you name it pastas trying to find one I actually enjoy. Finally! This tastes exactly like spaghetti. If you served it, and didnโt say anything, no one would know. It does take longer to cook, I cooked about 22 minutes, but so what. And I also love that it doesnโt stick together at all. I hate when you refrigerate leftover pasta and itโs glued together. This stays nicely separate. Iโm absolutely thrilled I tried it and can enjoy spaghetti sometimes without the guilt. Is it more expensive? Yes. Am I eating it every meal? No. For the number of times I will eat it every month itโs worth every penny. Iโve tossed all other pasta substitutes in my pantry. Iโve finally found the gold standard.

Good tasting pasta
Although there are other low-carb pastas available, this one is higher carbs than some of them, but tastes very close to regular pasta youโre used to eating. Itโs a bit chewier and al dente and you have to cook it over 15 minutes, but it is close to the taste (and near texture) of the high carb regular pasta. Not sure if you could cook it longer to be more tender. Iโve only cooked once to go on a meat sauce. 16 net carbs is much better than 40 of regular pasta. So I recommend it even though, like the other low carb pastas, itโs very expensive. But if youโre on a keto/low-carb diet, and you donโt eat it often, I think itโs worth the extra cost.Update: I have cooked this pasta now three times. I find if you cook it longer than 15 minutes, until the texture you like, it is soft and similar to regular wheat pasta. As a matter fact, I canโt tell any difference. I donโt think itโs that expensive now compared to some of the pastas out there that are $25 and $30 for a couple boxes. So Iโm going to order the elbows next and make some low-carb yummy mac & cheese. I canโt say enough good about this brand of pasta. Please do not stop making it. It is a godsend for us low carbers.

Delicious. Absolutely the best protein pasta I have ever had. Doesnt taste weird, doesnt fall apart with a weird texture. just mouthwatering pasta.

Terrifically toothsome lower carb pasta!
I am moderately impressed with Carbe Diem pasta. It has the shape and a much better mouth feel than shirataki, hearts of palm, and perhaps even edamame pasta alternatives, which makes it more appealing in the first place. But there are some significant differences between the Carbe Diem pasta, and other standard pastas. Price is the first thing...Carbe Diem is definitely more expensive than regular pasta, but, if I want to indulge in a pasta dish, I find the price completely acceptable. I can't seem to get the cooking time down yet, and while I cook Carbe Diem pasta in excess of 16 minutes, I find that it is still pretty chewy. Not a problem for me, but there it is. Lots of fiber with this pasta, which I personally find tends to produce a significant amount of bloating and gas. Again, this is pretty acceptable because, you know, PASTA, and I don't eat it very often! It also seems to me that the sauces with which I cover my pasta kind of go to the bottom of a plate, or bowl, thus requiring a good mix occasionally to incorporate everything. I found the Carbe Diem pasta very filling and satisfying with the chewiness an actual bonus, as it requires more mindful eating. I like it very much and plan to try the other varieties for different dishes.

Love this pasta - good flavor and texture and you get your whole day's worth of fiber in a serving of spaghetti. All the Carbe Diem pastas are excellent! Highly recommend!

Tastes funny.
Maybe I assumed wrong or my expectations were too high because I thought this would taste like regular pasta. It doesn't. If the healthy versions of pasta all taste like this one does, I'll just have to keep eating the unhealthy stuff I guess because I wont sacrifice TASTE!!! No, thank you.
