How much of the door comes pre-assembled and how much needs to be done by the installer?

me fully assembled however it does need fitting.

May I know how much handle protrudes from glass?

Very little, the handle is very neat and easy to operate.

Will the 700mm frameless bi fold fit 720mm opening

It should do as there is a lot of adjustment in the frame.
