Q: It isn’t designed for food. But could it be used to flatten dough to a specific thickness, e.g. 1/4 inch ?

I don't think it would work well since only one of the rollers is driven. The other is friction drive and I think this would tend to tear the dough easily.

Yes, you can adjust the tension on the rollers depending on the thickness of the items you need to wring out. Both wing nuts and hex nuts are included so you have your choice of which to use for adjusting. Thanks for your interest!

Q: Is this wide enough to ring out a sleeping bag?

The rollers are exactly 12 inches or 30.5 cm. Seems too small for a sleeping bag even if you double it over. Works well for most cloths and wiping rags.
