why does this have maltodextrin in it?

Maltodextrin is a sugar. Not sure why it's in here. But I know I can't take it because it causes diarrhea for me. So I'll have to look for another brand that doesn't have this in.

Is this equivalent to Strontium bone builder?

I have no idea, but for this unfortunately didn't seem to help me. I had a broken humerus that was very slow healing and after taking this for three months, no change.

can you take out the shell and just eat the power inside mix with water? I dunno if the outer-shell contains vitamin or nutrients?

You could do that if you don't like swallowing capsules. The capsule shell is just a typical 2-piece capsule covering. All of the nutrient supplement is contained inside. I'm not sure how well it mixes in water (as in, does it stay mixed or does it settle to bottom of water), but you could always add it to food or a smoothie if it doesn't smoothly mix with water.
