Review: worked great! - The only issue I had was the included string for tying it off, it was kinda crappy and hard to tie... I just grabbed my roll of butcher string and worked great. After slicing the sausage the casing easily peels off. People complaining about the meat drying out is probably their own fault you should have a water bowl full at all times inside the smoker putting off steam.. mine was great until the water ran out.. fortunately it only was a little dry since the water ran out near the end of the smoking time

**Q: These casings work to make cured salami where there is loss of 30% of the weight?**
A: I will tell you this. This is the best product I have used so far. Sure you are going to lose some weight as they smoke, but it isn't too much. Another thing I have found is that the more fat you have in your mix the more weight you lose as I always hang my summer sausage from the end in my smoker. I was using cheaper ground beef from the local box store and my summer sausage would shrivel up a little because I lost a lot of the fat. I then used an 80/20 mix and everything turned out perfect and most of the fat stayed in. I think that making salami you want to go with a natural casing like hog intestine or something along that line, but I also don't see why these wouldn't work for you.

**Q: Are these vegetable protein-based or animal protein?  Thanks!**
A: It is made of collagen which is the most abundant protein in animals.

**Q: Do you need a machine to stuff or can it be done by hand?**
A: I suppose it could be stuffed by hand but we use a sausage stuffer with a large stuffing tube on it.

**Q: Are these non-edible "fibrous" casings or true "collagen" edible casings? I'm getting mixed descriptions from the reviews and descriptions. Thanks.**
A: please don't eat them... they make great semi-porous casings! for smoking, steaming, baking... but I am damn sure positive... yer belly and your butt don't need more issues!!!

Nice casings for air dried sausage. No problem to fill or tie off. After drying the casing is still permeable enough to allow for cold smoking. Also - it was reported that these casings are not good for air dried sausage - this is bunk! ### ⭐⭐⭐⭐ Will do 16lbs worth of meat

So these casings are recommended with the backwoods 25lb sausage kit, there are only 16 casings and stuffed to the max I could get about a pound a piece in them. Secondly your paying a little over a dollar a piece for a casing which seems high to me because I could go to Walmart buy the 30lb sausage kit with the casings for basically same value. They are a good size for sharing and cook well. The casings themselves I'm pleased with but just know you will need 2 packs for a full 25lb kit. Overpriced but good quality imo.
