Question 1

Has anyone upgraded from the lux or duo to the ultra? is it worth it for the easier controls and greater programmability?

I have had both the lux and the duo. I love the ultra the most because, 
1. It looks more sleek with less buttons.
2. It has an altitude adjustment so it knows the boiling point is lower the higher you are.
3. The autosealing valve, you don't have to remember to close the sealing valve on the top, it seals it for you when you close the lid.
4. The little graph on the bottom of the screen, help you better estimate how long the preheating process is.
5. Changing the pressure level, the keep warm, and the delay start is so much easier because it is on the screen when setting the time.
6. The added feature of no pressure, and customs temperatures.
All in all I love my ultra and use it several times a week and would not trade it for the world.

Question 2

This new model states in compensates for altitude.  Why?  I thought that was what pressure cooking is supposed to do.

I have found that you have to increase time at altitude.  By rule, I increase time (in a pressure cooker) by 5% for every 1000 ft over 2000ft.  So, at 3000ft-5%. 4000-10%, etc.  When i use it at the cabin at 5200ft, i multiple the original recipe’s time by 1.15.  Very easy to remember but if you live at altitude having these settings built in would be fantastic.

Question 3

Want to try the sous vide function but need something to circulate the water. Anything on Amazon to do this?

You don't need a circulator but you will need a thermometer because the water temperature is not regulated the way a normal sous vide is. Depending on how much water you have in the pot.  you'll need to adjust the temperature accordingly. For example with a 2/3 filled pot and 130 degree setting, the water never got above 123 degrees in my pot. With 2" of water it gets much closer.

Is it usda approved for canning?

USDA does not approve canners PERIOD.  So many misleading answers were given here.  A scientist did her own independent testing and published her results on youtube, look it up.  You see your temperature readout in real time and can monitor that, as long as you don't drop below 240 degrees, your food is safely canned.  The machine regulates the pressure to keep the temperature within the required range for the required amount of time.
