Do we have to go tubeless? Can we safely use tubes?

Absolutely yes. I have these tires on tubeless ready rims and they work perfectly. For my riding, going TL doesn’t seem to offer any advantage so I just get the tires I like and add tubes. These are great tires too.

Can these be used in hookless rims?

Yes. Just follow the pressure limits or it will blow off.

Is there any difference between the black and brown sidewall?

Other than looks, I'm not aware of any. I've used both on different bikes mounted as tubeless, and I've not been able to detect any difference.
