Perfect little pan
I was so pleased with the quality and weight of this little pan. I was unsure how successful it would be on my induction hob but from the very small base it heats up the side of the pan without overheating the long handle. The steel is thick and once to temperature retains the heat for long enough to fry my spices. The finish is beautiful and after washing it looks brand new. I'm looking forward to making little round fluffy omelettes in it from a recipe I saw on YouTube, Curries with Bumbi is the channel which is where I saw a similar pan. I hope it's ok to recommend a YouTube channel on here, because anybody learning about curries would love Bumbi and her recipes.

Excellent for tempering, shame the pan needs support
A well-made piece of cookware, perfect for frying mustard seeds and other elements of tempering for curries, with a strong and long handle. I was concerned that, with a small base, it might not work on my induction hob but it heats up fine. My one frustration is that it does not sit on my induction hob - it tips unless you hold it. The manufacturer's label states that models with a support are a fire risk as they may be left on the cooker, so better to hold it while preparing the temper. However, it is hard to drop in different spices at different stages with one hand only. I prop mine up with a little pot to keep my hands free while adding spices. Certainly one should not move away while preparing the temper, so this is just for the brief time during which different items are added. (As the whole pan is quite low, even if it did tip it is at a low angle and isn't likely to spill the contents, though it would lose contact with the induction surface.) Nevertheless, the quality of the Hawkins tadka pan is excellent and the size is just right for its purpose.

Looks good and sturdy. Although this item was described as compatible with an induction hub, it did not work as expected. Therefore, it is currently no use to us .

For serious cooks. The 1.5 Hawkins tadka pan is compared to a standard 1 cup measure in my photo to give you an idea of size and scale. I include a photo of the box it came in to show that it is really from India. This is a heavyweight stainless steel pan that is a handsome instrument to have in the kitchen for making tadka. Originally I wanted to just buy a cheap and flimsy model, the kind with a stand or a notch in the handle, but I am very glad I didn't, because the cheap ones are nonstick and I try to avoid Teflon and nonstick coatings. As indicated in the product description. the Hawkins tadka pan is deliberately "unbalanced" so that you MUST hold it at all times over the gas burner ring while you are making tadka. You cannot set it down and walk away as it will tip. This is an intentional and excellent product safety feature to prevent your tadka or stove from catching fire, as you are heating up hot oil in small quantities. The manufacturers recommend handwash only. So far my pan seems fine after being washed in the top rack of a dishwasher.
