Q: do you use hot water to brew this and leave it to cool, or do you brew it in cold water?

Hot, but not too hot or you’ll burn the tea. It should NOT be boiling. Just a slight bubbling. The best test for it being the right temp is if you can put your finger in the water for a few seconds without it hurting. It should be hot, but not burn your finger & leave a blister hot. Then just put your bag in and let it steep with the heat OFF for 5 mins. Then let it cool completely before putting it in the fridge (if you want to serve it cold) or it will turn bitter.

I was always very pleased with my results. It took a bit of trial and error to get the results I wanted. But I do have to say I'm pleased with the product. It might not be quite as good as ready made but it's pretty close.
