Curcumin, sometimes called Indian Saffron due to it's vivid yellow coloration, is a multifunctional compound produced by several plants, most commonly turmeric. Typically grown in Southeast Asia turmeric roots are harvested, cured and dried and the bright yellow curcumin is extracted. Long used to flavor or color food, curcumin has also been used for over 5,000 years a healing agent in Ayurvedic (ancient Indian) medicine. In the Western world, curcumin as a distinct compound was first described in 1815 by two French chemists, and has become widely used as a natural coloring agent. More recently numerous positive health benefits have been described including a lowered risk of heart attack, alleviation of pain and a reduction in skin irritation. The exact mechanism for this remains poorly understood although it is thought to be linked to curcumins strong antioxidant capacity.
