Is the BT 7 fitted with a temperature override switch?

Be careful.  The model numbers are very confusing on these Backer thermostats with people using manufacturer's numbers, distributor stock numbers and simplistic brand numbers like 'BT7'.  First check whether you have a separate high temperature safety cut out (i.e. needs manual resetting and does not form part of the automatic switching on/off of the thermostat in normal use) mounted separately in the head of your heater element, or if the cut out is a manually resettable button within the head of the removable thermostat.  Choose a thermostat with/without the resettable safety cut out as needed: you absolutely should have a safety cut-out one way or the other, otherwise you risk your immersion heater turning into a permanently 'on' kettle until your tank etc is literally boiling and may risk ruptures, explosions, leaks (remember 3 Mile Island and Chernobyl) and your insurer may not be cooperative.  Also, if you buy the wrong thermostat, the head may be too big to fit within the head cover of the heater element.  Look carefully at your outgoing thermostat head and then zoom in to the pictures of the various units on offer to be sure you can see the differences and choose accordingly.

Is does not matter the  but the thermostat normally finds its own position you can put the lead from the lmmersion heater in either side and the live supply  ie the brown wire opposite hope this is useful.

can the heater rod be removed? thanks

Assuming you mean can this thermostat rod be removed without draining the system, yes it can. However, you have to disconnect the electrical conductors first and then reconnect them after inserting the new thermostat, so you have to be confident that you can do this safely. If you need to replace the immersion element itself, you have to drain the system first.
