The manual says to choose between Max and Eco settings. What's the difference?

If you put the mini fridge on eco setting the fridge will switch off and on when it gets to temperature inside the fridge. The max setting the fridge will be on all the time and stay at maximum temperature all the time . I use on max setting because it stays really cold all of the time and it depends on what you want to stay cold in the fridge.
