Q: How high heat can you cook this oil with to remain stable?

I only cook and bake with evoo. When cooking on the stove top, I rarely go above medium heat. Hot enough to cook, low enough not to smoke. Hope this helps

I have increasingly been wondering about this brand. I have seen several food coverage stories that have questioned authenticity of the 'premium selection' or 'first cold pressed' and even "fake" olive oils. Colavita Extra Virgin Olive Oil has been mentioned among those brands in question. The problem with these stories is proper, real, research-based attribution. So many food stories are written with sponsorships that I do not pay much attention unless from NYTtimes, NPR The Splendid Table, America's Test Kitchen or other top food reviewers where there is no direct sponsorship, ie... real journalism. I recently received my order and it tasted fine. I am using the oil for every day cooking, not necessarily my "best oil" for dipping or as more direct flavoring. So until I find another affordable, everyday, rich-flavor olive oil I will continue buying Colavita. However, I do pay attention to what I am buying, receiving and the dates on the tin.
