Is is safe to only use some of the yeast and keep the rest for a later run? I am doing my first ever liqour run and am testing out a 1 gallon batch.

its difficult to say as you may or may not get the right quantities by splitting the packet which will hamper the results. be better to buy a smaller packet of yeast (brewers) to use. most of these turbo yeasts are for 25ltres and contain not just yeast but other ingredients.
