Can someone please advise on how to,stop the fold of my pastie from splitting open when I clamp the two,sides of the press together to crimp the edge.

Perhaps try to making sure the pastry is allowed to drape into the centre shape of indentation of the mould, instead of stretching across it. The pastry will then not be quite so taut once filled and mould closed.......

Do not know. However because I lightly coat the mould and pastry with a dusting of flour, AND the mould is only in touch with dusted mould for a second say, I do not believe that there is potential for any transfer. Hope this helps. Have to say I and my family were blown away of what you can produce with these. Didn't get it right the first time. Pastry needs to be not too wet, not too dry. I am also a notorious 'overfiller'! Once I stopped overfilling it was great and the largest size are superb for a non traditional shaped pasty.

Hi does this get the air out of the ravioli?

I haven't made ravioli only beef and ale mini pies and mini pasties. I believe it would depend on how much filling you put in. When you first use them one tends to over fill. Your first few are experiments, until you get it right. So don't use these for the first time for an important occasion. Have a dry run. What I can say is that I have found them really great and they efficiently produced mini pies and pasties in short crust and puff pastry. Really very pleased with them.
