Fantastic Taste & Health Benefits Too? You Really Must Try Some!
If you enjoy olives you really must try this pate! The process of mashing the olives releases all sorts of extra flavour, giving you tastes that whole olives can't. I can certainly notice extra layers, complexities and nuances, and it makes the flavour more vivid too, meaning a little goes a long way. Try the same trick with strawberries by the way, your taste buds may thank you for it.I've consumed other olive pates but this is my favourite to date. Initial impressions are of sharp citrus notes before a deep and subtly bitter taste of fresh olive kicks in, and these two flavour notes perfectly balance the richness of the oil. Unlike other pates this is not cloying or fatty or bland, and it doesn't come across as being lazy in the way that some tired foods do. Not a bit of it, this is full of energy and the joys of life, and it bounces around your taste buds enthusiastically sharing its youth and vigour! Consistency is excellent and it retains an artisnal texture instead of being liquidised into oblivion like some. I don't quite understand how Biona manage it, but this really does taste completely fresh, as if the olives were just off the tree.I use this pate in all sorts of ways. A dab works wonders on fresh chicken breast grilled with herbs, and a spot here and there in a good mixed salad lifts it with unexpected bursts of flavour. It's delightful spread on freshly baked bread or crackers, compliments cheese and is superb as a dip with crudites. Your imagination and creativity are the only limits, and I view it now as a permanent fixture in my kitchen. I purchase mine in bulk by subscription order here and enjoy a very welcome 15% discount as a result.And Now The Science Bit:As a bonus, olives and olive oil are proven to be beneficial to health. They contain an abundance of phenolic antioxidants as well as the anti-cancer compounds squalene and terpenoid. They also contain high levels of monounsaturated fatty acid and oleic acid which reduce chronic, excessive inflammation. These two compounds also work to neutralize the damaging effects of free radicals on the body's cells. Olive oil contains biophenols which suppress synthesis of LDL or "bad cholesterol" . The biophenols reduce blood pressure, therefore reducing the development of arterial plaque as well. Olives contain a compound called oleocanthal that has strong anti-inflammatory properties, mimicking the action of ibuprofen. Olive oil naturally reduces the pain of chronic inflammatory diseases such as arthritis and can be added to a daily diet to aid in pain reduction. The antimicrobial properties in olives and olive oil help to combat the bacteria responsible for causing stomach ulcers. Studies have shown their high levels of polyphenols protect against eight strains of ulcer-causing bacteria, three of which are resistant to some antibiotics. Lastly, olives contain a substantial amount of iron, a key factor in the formation of hemoglobin, the protein that carries oxygen throughout the body via the bloodstream. Iron also helps to build the enzymes responsible for regulating immune function and cognitive development.So, what better excuse could one need for enjoying this marvelous stuff? Do try it!

Black olive pate !!
Thick paste made of crushed black olives, really tasty, not too salty or oily and thoroughly moreish. Perfect as a topping on its own on crackers or toast, or with cheeses and meats as a real flavour-enhancer. Delighted I discovered this, wouldn't hesitate to recommend and will definitely order more.
