My daughter needs small weights for her 7th grade science fair project, are these appropriate or for small children only?

They are NOT accurate. I have a digital kitchen scale that I have no reason to doubt, and the 1 gram pieces weight under while the 10 and 20 gram pieces are over. Do not expect accuracy for any purpose, including between themselves.

What is the total weight for all combined pieces? I'd like to use these in a ship building activity- are they waterproof too?

There are 54 pcs, totaling 300g. 20-1g, 20-5g, 10-10g, and 4-20g. Yes they are waterproof as they appear to be of a coated resin /plastic composite. Good quality.

Needs more weight to them

Not the best weights. It is very hard to differentiate between the weight of each one. I was hoping children could place different weights in each hand and tell me which is heavier, but with these being plastic and not much weight to any of them this game is not possible with these.

Wonderful learning tool

This is a brilliant product for teaching my children about different weights, they can see how many times each weight can fit into another and after weighing them on the kitchen scales they are accurate.
