Is it okay if the water/brine overflows?

Mine does with sauerkraut sometimes but I've learned to leave more space at the top to compensate for some loss. If you lose too much brine then you need to add a little more to keep all the vegetables below the surface of the water.

Can this be used on half gallon jars? Thanks

These are designed to be used with wide mouth jars, if the gallon or half gallon jug or whatever you want to use is the same size as a wide mouth mason jar then I would say you should be able to use it. You just want to make sure the glass holes everything underneath the liquid.
