Can this be used to make a dig site - so embed items in it while it drys - and then chip away at it like a geological dig site

I would guess this would be possible as it seems quite chalky and brittle when set.

No sorry, I used to use it in school lessons but it can get hot when you add water, bad for eyes.

After moulding is it waterproof for an outdoor sculpture?

I've never used the plaster out of doors, but, I have used it in my bathroom, where it does come into contact with water. From my own experience, I would definitely say that you can use it out of doors, on your sculpture.
