Hi Melvyn, malt extract contains vitamins, A, B2, B3, B6, B12,iron, zinc, calcium, magnesium and phosphorus. It also contains some amino acids, protein and carbohydrate. The amount varies a little by make but not much. I hope this helps.

Could this be used as a sweetner for porridge

I don't see why not. In hot porridge it should melt, then just stir it in. I've used it in cooking with no problems. But then I've been eating it for over 55 years. Rob.
